Tort cu cireşe şi mascarpone / Cherry-Mascarpone Cake


Nu mă puteam întoarce după atâta vreme pe blog fără o reţetă de excepţie, cum este acest tort. Am combinat câteva elemente deja încercate cu unele noi, improvizate chiar, şi am obţinut în final un tort consistent, dar răcoritor, care poate fi pe placul oricui: ciocolată, fructe, cremă spumoasă.

TORT CU CIREŞE ŞI MASCARPONE
  • 5 ouă
  • un vârf de sare
  • 100 g zahăr
  • 100 g ciocolată albă
  • 100 g unt
  • 100 g făină
  • ½ linguriţă mahlab
Plus:
  • 150 g cireşe fără sâmburi (cam 25 de cireşe)
  • marţipan
Dulce de cireşe:
  • 300 g cireşe fără sâmburi
  • 50 g zahăr brun
  • ¼ linguriţă suc de lămâie
  • 500 g mascarpone
  • 150 g lapte condensat
  • 250 g smântână dulce
  • ½ linguriţă mahlab

Pregătim blaturile cu o zi înainte, urmând instrucţiunile din reţetă şi adăugând la fiecare o jumătate de linguriţă de mahlab (de preferat amestecată cu făina).


Pentru unul din blaturi, umplem o mână de cireşe (cantităţile de mai sus sunt orientative) cu bucăţele de marţipan, le tăvălim prin făină şi le scuturăm bine de surplus. Le adăugăm la final în aluat.







Tot cu o zi înainte pregătim şi dulcele de cireşe (nu am ştiut cum să-l numesc altfel, căci nu e nici gem, nici dulceaţă, nici altceva).
Blenduim cireşele, apoi transferăm piureul obţinut (destul de lichid) într-o crăticioară.




Adăugăm zahărul şi amestecăm bine.



Punem crăticioara pe foc (potrivit), acoperită cu un capac.


Când începe să fiarbă, micşorăm focul şi amestecăm cu grijă cu o lingură de lemn. Acoperim iar, apoi mai amestecăm şi tot aşa, până se îngroaşă. Nu trebuie să fie prea gros, se va mai îngroşa oricum şi pe măsură ce se răceşte. Eu l-am ţinut pe foc în total cam 30 de minute.



Lăsăm apoi dulcele la răcit, adăugăm sucul de lămâie, turnăm într-un borcan şi păstrăm la frigider.





Crema de mascarpone o putem face în ziua în care dorim să servim tortul, dar cu câteva ore înainte.
Urmăm instrucţiunile din reţetă, doar că, la final, adăugăm jumătate de linguriţă de mahlab.



Punem crema într-o caserolă care se închide bine şi dăm la frigider pentru minim o oră.

Pentru asamblarea tortului, tăiem pe orizontală doar blatul simplu, iar pe cel cu cireşe îl păstrăm întreg.
Întindem puţină cremă pe platou, apoi aşezăm blatul cu cireşe.



Ungem blatul cu 2-3 linguri de dulce de cireşe (stratul nu trebuie să fie consistent, pentru că va fi greu să aplicăm apoi crema de mascarpone).



Punem apoi un strat generos de cremă (cam o treime).



Facem un şănţuleţ circular mai aproape de centrul tortului şi îl umplem cu dulce de cireşe.



Aşezăm deasupra o jumătate din blatul simplu şi repetăm straturile: dulce de cireşe, cremă de mascarpone şi iarăşi dulce de cireşe într-un şănţuleţ.




Acoperim cu cealaltă jumătate de blat simplu.


Îmbrăcăm tortul în cremă, păstrând câteva linguri pentru un al doilea strat.


Introducem tortul în frigider pentru 15-20 de minute.
Aplicăm apoi încă un strat de cremă şi îi dăm aspectul dorit: neted sau cu modele.


Introducem din nou tortul în frigider pentru cel puţin 2-3 ore (aromele se vor întrepătrunde, blaturile vor deveni mai moi, iar tortul va fi răcoritor).

Înainte de servire, decorăm tortul cu dulce de cireşe. Eu am trasat pur şi simplu nişte dungi. Lăsaţi-vă imaginaţia liberă, dar folosiţi totuşi un model mai simplu, ca să se potrivească bine cu simplitatea acestui tort.

I couldn't come back after so long without an exceptional recipe, like this cake. I combined some elements I've already tried with new, even improvised ones. In the end I got this cake: consistent, but refreshing, which can respond to anyone's taste: chocolate, fruits, moussy cream.

CHERRY-MASCARPONE CAKE
  • 5 eggs
  • a pinch of salt
  • 100 g sugar
  • 100 g white chocolate
  • 100 g butter
  • 100 g flour
  • ½ teaspoon mahlab
Plus:
  • 150 g pitted cherries (about 25 cherries)
  • marzipan
Cherry sweetness:
  • 300 g pitted cherries
  • 50 g brown sugar
  • ¼ teaspoon lemon juice

Follow the instructions from the recipe and prepare the sponge cakes one day ahead. Add each time half a teaspoon of mahlab (it's easier if you add it into the flower).
For one of the cakes, fill one handful of cherries (the quantities above are just indicative) with marzipan cubes and lightly dust them with flour. Add them in the batter just before pouring it into the cake pan.

One day ahead prepare also the cherry sweetness.
Blend the cherries, then pour the liquid puree into a saucepan.
Add the sugar and mix.
Put the saucepan on medium heat, covered with a lid.
When it starts to boil, reduce the heat and carefully stir with a wooden spoon. Cover again, then stir again and so on, until it thickens. It doesn't have to be too thick, as it will thicken more as it cools down. I kept it on heat for about 30 minutes together.
Let the sweetness cool, add in the lemon juice, then pour it into a jar and keep it into the refrigerator.

You can make the mascarpone cream the day you want to serve the cake, but some hours before.
Follow the instructions in the recipe, but add, at the end, half of teaspoon of mahlab.
Put the cream in a casserole and refrigerate for at least one hour.

For assembling the cake, slice horizontally the simple sponge cake and keep the one with cherries in one piece.
Spread a teaspoon of cream on the plate, then place the cherry sponge cake.
Spread 2-3 tablespoons of cherry sweetness (it mustn't be a thick layer because it will be more difficult to apply the mascarpone cream), then about a third of the cream.
Make a small circular ditch close to the center of the cake and fill it with cherry sweetness.
Place a slice of the simple sponge cake and repeat the layers: cherry sweetness, mascarpone cream and again cherry sweetness in a small ditch.
Place on top the second slice of cake.
Cover the cake in a thin layer of mascarpone cream, keeping some tablespoons for a second one.
Refrigerate the cake for 15.20 minutes.
Apply another layer of cake and give it a smooth aspect or a messy one as you like.
Refrigerate again for at least 2-3 hours (the flavors will have time to combine, the sponge cakes will soften and the cake will become refreshing).

Before serving, decorate the cake with cherry sweetness. I just made some stripes letting the cherry sweetness flow from a spoon. Just use your imagination, but at the same time use a simpler pattern, which would go perfectly with the simplicity of this cake.
